Dear Etalia Friend,
It is a pleasure to be in touch with you again. Just a reminder, the next wine dinner at Etalia will be this coming Tuesday, June the 20Th at 6:30pm.
We will be presenting the Rodney Strong Vineyards. For the last 50 years, Rodney Strong was one of the pioneers of Sonoma County’s modern wine industry, an acknowledged visionary who understood the potential that Sonoma County’s soil and climate held for producing world-class wines.
Our chefs have carefully selected 5 of these wines and we have paired them with an exclusive 5-course meal.
Our first course of the evening will be a Prosciutto wrapped honeydew melon bites. Perfectly balanced and paired with our first wine of the evening a Sauvignon Blanc, a fresh, bright and crisp wine with balance, richness and aromatic complexity.
Our second course of the evening will be a PEI mussels in taleggio cream sauce with leeks and garlic served with warm crostini. Paired with Chalk Hill Chardonnay, this wine is made in a barrel fermentation in new and seasoned French oak with added toasty vanilla and spice complexities. In the glass, the wine is both creamy and crisp, with flavors of golden delicious apple, Meyer lemon, baking spices with a hint of minerality on the long finish.
Our third course of the evening will be a House made Lavosh cracker topped with Gorgonzola mousse topped with balsamic figs, dressed with fig reduction and toasted oats. Paired with a Pinot Noir, a wine that is soft and silky, with intriguing floral and crushed pomegranate aromas.
Our fourth course of the evening will be a slow roasted beef tip raviolo in a mushroom gravy. Paired with a Cabernet Sauvignon. This deeply colored Cabernet is bursting with aromas of spicy dark plum and crushed blackberries with a hint of blueberry. The complex layers of spice and chocolate on the palate are framed in rich, velvety tannins with a long lingering finish.
For dessert we will be serving a dark chocolate Belgian waffle w/ Hazelnut whipped cream and toasted coconut. Paired with a Cabernet Sauvignon Reserve.This wine is rich, lush and full bodied, it displays intense aromas flavors of blackberry, black currant, cocoa and crushed violet. This wine is velvety with a smooth, lingering finish of toasty baking spices and vanilla.
